Proportion: 1:2…One part fresh herbs (washed and dried!) to two parts vinegar.
1-Put herbs in clean dry jars and pour in vinegar–making sure all leaves are completely submerged.
2-Cover jars with BPA-Free plastic lids. (If using metal lids, cover top of jars with plastic cling wrap first.)
3-Store jars in a cool, dark place for two weeks.
4-After two weeks check the flavor. If a stronger flavor is desired let the herbs steep for one to two more weeks.
5-Strain and pour liquid into clean, dry glass bottles and cap with cork or BPA-Free plastic lids.
